Instant Pot Mexican Chicken and Rice

INGREDIENTS

Onion | Garlic Rotel | Black Beans Can of Corn | Salsa Taco Seasoning Shredded Cheddar Cheese Boneless Skinless Chicken Long Grain White Rice Chicken Broth | Green Onions

Turn on the sauté setting and heat oil in the Instant Pot. Cook the chopped onion for 2–3 minutes until soft, then add garlic and sauté one more minute before canceling sauté.

DIRECTIONS

Stir in the undrained Rotel, drained black beans, drained corn, salsa, one cup of cheddar cheese, and taco seasoning. Mix everything well so the vegetables, cheese, and seasonings are evenly combined.

Add the chicken pieces, uncooked rice, and chicken broth to the pot. Gently stir to distribute ingredients evenly, making sure the rice is mostly submerged in liquid for proper cooking. Seal the lid and pressure cook on manual for 5 minutes

Let release naturally 5 minutes, vent steam, fluff rice, and melt remaining cheese. Serve with salsa and any favorite toppings.
