Cilantro Pineapple Grilled Chicken made by marinating boneless chicken in pineapple, onion and cilantro marinade before grilling over hot coals.

Ingredients  

  • 4 medium boneless skinless chicken breast halves
  • 1 cup Citrus Onion Marinade ((or favorite chicken marinade))
  • ½ can drained pineapple bits
  • 1 tablespoon minced cilantro
  • 1 cup BBQ Sauce

Instructions 

  • Trim the fat from chicken breast halves
  • Place the chicken in a bowl and pour ½-3/4 cups marinade over the chicken and toss pieces to coat.
  • Add pineapple and cilantro to the bowl and toss to coat.
  • Marinade an hour.
  • Cook on a medium-high hot grill until the chicken is cooked trough to registers 165 on a meat thermometer.
  • Serve with Mango Salsa.

Recipe Expert Tips

  • Boneless chicken thighs can be used.
