Ingredients
  

  • 2 pounds cubed pork meat
  • 2 14.5 ounce cans of diced tomatoes with chilies
  • ½ cup diced onion
  • ½ cup diced bell pepper
  • 2 cups chicken broth
  • 15 oz can corn kernels drained
  • 15 oz can pinto beans drained and rinsed
  • 2 teaspoons minced garlic
  • 2 teaspoons ground chili powder
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions 

  • Place all the ingredients into a 4 quart crock pot.
  • Cook on high for 4 hours or low for 6 hours or until pork is cooked through.
  • Makes 4-6 servings.

Notes

  • Do not over cook or the pork will be dry and tough.
