Ingredients  

  • 2 medium boneless skinless chicken breast halves
  • 64 oz. low sodium chicken broth
  • 1 large onion (diced)
  • 2 large dried bay leaves
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • 2 stalks celery stalks (sliced)
  • 2 large carrots (sliced)
  • 15 oz. can cannellini beans (drained and rinsed)
  • 2 cups tri-color pasta
  • 1 cup corn kernels (drained)

Instructions 

  • Place the first 8 ingredients into a 4-quart crock pot.
  • Cook 3 hours on high or until the chicken is cooked through.
  • Remove the chicken from the crock pot and pull apart.
  • Remove the onion from the crock pot and discard.
  • Add the beans, pasta and corn to the crock pot.
  • Cover the crock pot.
  • Cook until the pasta is tender about 1 hour.
