In a bowl mix the first 6 ingredients.
Spread 2 heaping tablespoons of filling down the center of a flour tortilla.
Fold the tortilla burrito style securing with a tooth pick.
Repeat with remaining ingredients.
Heat the oil in a skillet and fry the Chimichangas until golden.
Drain on a paper towel.
Serve with your favorite Mexican side dish or as an appetizer.
Makes 8-10 Chimichangas
