Celebrating Cinco de Mayo or just love authentic Mexican food? This homemade Chimichangas recipe is the perfect Mexican appetizer recipe. Filled with seasoned shredded beef, green chilies, black beans and cheese. The outside is crispy and the inside packed with flavor.

Ingredients  

  • 2 cups Crock Pot Shredded Beef recipe
  • ¼ cup diced green chilies
  • ½ cup black beans
  • 2 teaspoons chili powder
  • ¾ cup shredded cheese
  • ½ cup sour cream
  • 8 small flour tortillas
  • 2 cups vegetable oil
  • Sour cream
  • Pico de Gallo

Instructions 

  • In a bowl mix the first 6 ingredients.
  • Spread 2 heaping tablespoons of filling down the center of a flour tortilla.
  • Fold the tortilla burrito style securing with a tooth pick.
  • Repeat with remaining ingredients.
  • Heat the oil in a skillet and fry the Chimichangas until golden.
  • Drain on a paper towel.
  • Serve with your favorite Mexican side dish or as an appetizer.
  • Makes 8-10 Chimichangas
