Easy Summer Fruit Salad with Ginger Infused Honey

Ingredients  

  • 1 cup honey
  • 2 inch piece of fresh ginger (cut into slivers)
  • 2 cups cantaloupe (cut into bite size pieces)
  • 2 cups seedless watermelon (cut into bite size pieces)
  • 1 cup blueberries
  • 1 cup strawberries (cut into slices)
  • ½ pint raspberries
  • 1 tablespoon slightly bruised fresh mint leaves

Instructions 

To make the Ginger Infused Honey

  • Wash, peel and slice the ginger.
  • Place the ginger pieces into a small sauce pan. Pour honey in to cover the ginger.
  • Over a low heat warm the honey and ginger for 5 minutes. Remove from the burner and cool to room temperature.
  • Transfer the honey and ginger pieces to a glass jar with a tight fitting lid. Cover the jar and store in a cool dark cabinet until ready to use. Can be made a week in advance to steep longer for a more intense ginger flavor.

To make the Summer Fruit Salad

  • Wash all of the fruit. Cut and cube the cantaloupe and watermelon. Trim the tops off the strawberries and slice.
  • Wash and dry the mint before mincing finely.
  • Place all of the prepared fruit and the mint in a large bowl with a tight fitting lid. With a large spoon gently toss all of the fruit together to combine.
  • Drizzle 2 - 4 tablespoons of ginger infused honey over the fruit and mix well.
  • Chill for at least two hours before serving.
  • Serve as a summer side dish.
