Slow Cooker Cheeseburger Soup

WHAT YOU NEED

Bacon | Ground Beef Onion | Garlic Cloves Rotel Tomatoes Cheddar Cheese Beef Broth | Milk  Salt And Pepper Corn Starch

Cook the bacon in a skillet until crisp, then transfer to a paper towel-lined plate to drain. Once cooled, roughly chop the bacon into bite-sized pieces and set aside for topping later.

DIRECTIONS

Wipe out the skillet and cook the ground beef with chopped onion until fully browned. Add minced garlic during the final few minutes. Drain the mixture well, then transfer it to the crock pot.

Stir in diced tomatoes,  1½ cups shredded cheese, milk, beef broth, salt, and pepper. Cover and cook on low for 2 to 3 hours, until heated through and the cheese is fully melted.

Stir in the cornstarch slurry, cover, and cook about 30 minutes until thickened. Top with remaining cheddar and chopped bacon, cover until melted, then serve warm with biscuits or crusty bread.
