Mexican Street Corn Casserole

If you love the authentic flavors of street corn you will love this Mexican Street Corn Casserole recipe! Perfect for Taco Tuesday or any occasion, it's a side dish that will delight your taste buds!

INGREDIENTS

Frozen Corn | Mayonnaise Sour Cream | Chili Powder Garlic Powder | Salt Ground White Pepper Queso Fresco Cheese Cilantro | Limes

In a large bowl, combine the corn, mayonnaise, sour cream, 1½ teaspoons chili powder, garlic powder, salt, white pepper, and 5 oz. queso fresco cheese crumbles.

DIRECTIONS

Mix well to ensure the corn is evenly coated. Pour the mixture into an 8x12 inch casserole dish. Evenly sprinkle with the remaining chili powder and  1 oz of cheese crumbles.

Bake in a preheated 350°F oven for 45 to 50 minutes until bubbling and heated through the center. Once done, remove from the oven and top with the remaining cheese crumbles and minced cilantro.

Squeeze the juice from half a lime over the top, if desired, and serve. Serve as a side dish for your favorite Mexican foods.
