Tender Instant Pot London Broil made with potatoes, sliced carrots and a rich homemade gravy. An easy way to make a tender London broil for dinner. Make a delicious beef roast dinner in about an hour.

– Prepare the Funfetti Cake & Cupcake mix as directed on the package adding the ½ teaspoon to the bowl with the rest of the ingredients.
– Fill cupcake papers ¾ full.
SAUTE
Prepare the vegetables. Cut the London Broil in half. Brown both sides of the London broil in the Instant Pot on the saute setting. Remove browned meat and set aside. Pour water into Instant Pot. Add onion soup mix and stir until it is dissolved.
Put trivet into the Instant Pot. Place the pieces of beef on top of the trivet in a single layer if possible. Add the drained potatoes on top of the meat around the edges of the pot. Next, add the minced garlic. Place the carrots on top of the potatoes.
Season with salt and pepper. Add the bay leaf and rosemary. Seal the lid on the Instant Pot. Pressure cook for 30-40 minutes. Allow a natural release of steam before opening the lid. Remove the meat and vegetables to a platter. Allow meat to rest.
Use the saute setting and bring the juices that are left in the inner pot to a simmer. Stir in a cornstarch slurry. Simmer until the gravy has reached the desired thickness. pour the gravy into a gravy boat or bowl and serve with the London Broil.
