Using the sauté setting, sauté the diced onion and garlic. Hit the cancel button to turn the sauté setting off. Dump the saffron rice into the pot and break up any clumps. Stir in bay leaves and black pepper.
Pour the chicken broth in over the rice. Add the sliced chicken pieces and stir to combine and mix the seasonings into the broth. Seal the lid. Press the manual button and set the timer to 5 minutes.
Once the cooking time has ended press the cancel button and push the pressure valve to the open position. Do not open the lid after the steam has released. Set an alarm for 15 minutes.
After the 15 minutes, open the lid. The rice should be tender and cooked all the way through. Immediately transfer the chicken and yellow rice to a serving bowl.
