Sauté the chicken in the Instant Pot on the sauté setting until lightly golden. Cancel the sauté setting. In a medium-sized bowl, whisk the cream soup, sour cream, and chicken broth together to combine.
Pour the creamy soup mixture over the chicken and mix to coat the chicken pieces. Sprinkle the dry stuffing mix over the chicken but do not stir. Twist the lid on and set the valve to sealing.
Pressure cook on high pressure by pressing for 5 minutes. When the pressure-cooking time is complete, do a quick release by pushing the pressure valve to the open position.
