Instant Pot Chicken and Broccoli Casserole

This Instant Pot Chicken Broccoli Casserole is a quick and hearty meal made with tender chicken, fresh broccoli, rice and creamy cheese sauce. A family-friendly dish ready in minutes!

INGREDIENTS

Chicken Breasts | Onion Lawry's Seasoned Salt Minced Garlic | Salt Pepper | Chicken Broth Long Grain White Rice Sour Cream | Cheddar Cheese Fresh Broccoli

Cut chicken into bite-sized pieces and season with Lawry's Seasoned Salt. Cut fresh broccoli into florets and blanch in salted boiling water for 2 minutes. Drain and set aside.

DIRECTIONS

Add seasoned chicken, onion, garlic, salt, pepper, and chicken broth to the Instant Pot. Sprinkle rinsed rice over the top (do not stir). Secure the lid, set the valve to sealing, and pressure cook on  Manual for 4 minutes.

Perform a quick release when done. Stir in broccoli, sour cream, and shredded cheese until combined. Top with remaining cheese, cover, and let sit for 5-10 minutes until the broccoli is tender and the cheese melts.
