Instant Pot Red Beans and Rice Recipe made with dried beans and Andouille sausage for that spicy flavor of Louisiana. This
no soak red bean recipe is done in
about 45 minutes when you make it in the Instant Pot.
Cook the white rice first so it's ready when the beans finish. Turn the Instant Pot to Sauté, melt the butter, then cook the onion, bell pepper, and celery for 1 minute. Stir in the garlic and cook briefly until fragrant.
Add the sliced Andouille sausage and toss with the vegetables. Stir in the dried red beans, thyme, and bay leaves, then pour in the chicken broth. Mix well to evenly combine all the ingredients before pressure cooking.
Secure the Instant Pot lid and set the pressure valve to Sealing. Pressure cook on Manual for 27 minutes, then let the pressure release naturally for 10 to 15 minutes before carefully opening the lid.
Press Cancel, then switch back to Sauté. Stir in the cornstarch slurry and bring the beans to a gentle boil, stirring until slightly thickened. Serve the flavorful red beans hot over cooked long-grain white rice.
