Dried Butter Beans made in the Instant Pot are no soak dried beans that are perfectly seasoned and tender. Serve as a side dish or main meal served with white rice and cornbread.
Rinse and sort the dried butter beans, discarding any debris. Peel and dice the onion and carrot. Add the beans to the Instant Pot, then add the ham, vegetables, garlic, salt, parsley, pepper, and bay leaves.
Pour the chicken broth into the pot and stir to combine all ingredients. Check that the sealing ring is in place, secure the lid, and set the pressure valve to closed before selecting Manual pressure cook for 30 minutes.
When cooking ends, press Cancel and allow the pressure to naturally release for 20–30 minutes. Carefully open the valve to release any remaining steam, then remove the lid away from your face.
Stir the beans and test for tenderness. Mash a few beans into the broth for creaminess if desired. Remove and discard bay leaves, then serve hot
with white rice and a wedge
of cornbread.
