Combine the apple juice or water with the lemon juice in a large bowl. Whisk together the sugars, Instant Clear Jel, cinnamon, nutmeg, and salt in a medium bowl. Set aside until needed. Peel, core and slice the apples.
As you slice the apples, place the slices in the bowl with the lemon juice mixture. Toss the apple pieces to coat them and keep them from browning. Once all of the apples have been sliced, mix the dry ingredients into the sliced apples.
