OPA! is a popular Greek term used to express excitement in the Greeks everyday life. I’ve never visited Greece myself but my husband and his family lived there for a couple of years when he was a child.
I’ve heard many stories about how the Greek celebrate life, their heritage and food on a daily basis.
The Greeks diet which is packed full of healthy ingredients like olive oil, grains, fish and dairy is one of the healthiest diets to follow I believe.
I have added olive oil to my own diet and use it as much as possible in my cooking.
One way to eat healthier is to enjoy this Mediterranean style snack recipe I made and enjoyed with Old London Rosemary and Olive oil Melba Toast this week.
It’s a simple recipe but a healthy one. It’s packed full of grilled vegetables, olive oil and herbs. Simple to throw together using some left over grilled or roasted vegetables as I have or plan ahead and make it the day before your expecting guests.
1 roasted red pepper
1 roasted green pepper
1/2 of a roasted onion
1/2 teasspoon fresh rosemary, chopped fine
1/4 teaspoon fresh oregano, chopped fine
2 tablespoons olive oil
Chopped all of the roasted vegetables
add herbs and olive oil
spread over Old London Rosemary and Olive Oil melba toast and
