What mom doesn’t try to get their kids to eat more veggies? I know when my kids were small I would try everything to get them to eat more vegetables. That included using Country Crock on their veggies. We use Country Crock on everything.
Our family has been using Country Crock for over 15 years. It’s all my husband will eat. My youngest who is almost 15 would eat it by the spoonful and that is no lie!
She must have been about 2 years old the first time I caught her doing it. If I had the container of Country Crock on the dinner table while we were eating dinner, when I wasn’t looking she would dip her spoon in and shove it in her mouth.

I decided to make the Broccoli Swamp recipe from the Cookbook.
This recipe put a smile on my face when I saw it. We live in Florida and we have lots of swamp areas nearby.
Broccoli is one of my daughters favorite vegetables so I had to try it out.
Prep Time: 20 minutes
Cook Time: 50 minutes
Stand Time: 5 minutes
2 Tbsp. Country Crock® Spread
1 large bunch broccoli, about 1-1/2
pounds, divided into florets
3 Tbsp. water
1 clove garlic, fi nely chopped
5 large eggs
1/2 cup fat-free half and half
3/4 cup low-fat Swiss cheese,
1/4 tsp. salt
1/8 tsp. nutmeg
1/8 tsp. ground black pepper
Assorted fresh herbs (tarragon,
basil, chives, rosemary, etc.)
Preheat oven to 350°.
Spray 9-inch pie pan with no-stick cooking spray.
On the stove top melt Country Crock® Spread in a pan.
Add broccoli and cook for 2 minutes, then add water and
garlic and cook, covered for 5-7 minutes until broccoli is
bright green but firm.
Remove from heat. Set aside 1/3 of the broccoli fl orets for
garnish and fi nely chop remaining 2/3.
In a mixing bowl, beat the eggs and half and half. Stir
in cheese and mix well. Stir in the chopped broccoli,
salt, nutmeg and pepper. Pour into pie pan and bake
for about 35-40 minutes until a knife inserted in center
comes out clean.
Remove from oven and let stand for 5 minutes. Insert
fresh herbs and reserved broccoli florets into the sides of
