Description

Grilled vegetables can be eaten along side any meat as a side dish or you can use these grilled summer vegetables to make a meal like this Grilled Vegetable Sandwich.

Ingredients

  • 1 medium eggplant
  • 2 yellow squash
  • 1 medium zucchini
  • 1 sweet Vidalia onion

Marinade Ingredients

  • 1/23/4 cups Extra Virgin Olive Oil
  • 3 sprigs of fresh rosemary or 2 teaspoons of dry rosemary
  • 1 1/2 Tablespoons finely chopped garlic
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt (optional)

Instructions

  1. Slice the vegetables 1/4 to 1/2 inch thick.
  2. Mix all the remaining ingredients to make a marinade.
  3. Spread the vegetables out in a single layer on a large cookie sheet.
  4. Brush the marinade over each side of the vegetables.
  5. Grill vegetables on a hot grill for about 5-8 minutes on the first side and 5 minutes on the second side.
