I had lunch with my chica’s yesterday. It was great to get together for lunch with two of my best friends. It has been way too long since the three of us moms had a chance to hang out.
Our three daughters are in the same grade. They went to the same elementary school together for 6 years. While our daughter were in elementary school together we hung out together all the time. Between school functions, field trips, birthday’s and holidays the six of us were inseparable.
Then middle school came around and even though we live in the same town all three of our girls went to three different middle schools. We still got together but not as much. Now all three of our girls will be starting high school next year. Sadly only my daughter and my friend Kim’s daughter will be going to the same high school.
The three of us moms got together yesterday for lunch. Kim’s treat. Kim is a very generous friend! She picked a great little Organic Cafe that she frequents for our lunch date.

I’ve never eaten at an organic cafe before so I wasn’t sure what to expect. Kim raved about the Veggie Burger on our way over there but when we got there one of the specials for the day was vegetable lasagna.
I couldn’t decide between the veggie burger or the lasagna. But finally the lasagna won out.
I could kick myself for forgetting my camera. So I don’t have any pictures to show you of the meal. I should have had Kim snap a pic with her cell phone but I was digging in and enjoying the meal so much I didn’t think about it. The lasagna came with a mixed salad and side of coleslaw. Huge proportions for a very reasonable price. I also had a glass of iced chai tea with my meal. I love iced chai tea!

Another first for me today during our lunch was the lasagna noodles. The lasagna noodles were made from brown rice flour. I have only eaten homemade noodles and store bought pasta made from all purpose flour. The brown rice lasagna noodles were a very pleasant surprise for me. They tasted so good!
I love homemade pasta so I may have to make my next batch from brown rice flour.
