Easy Refrigerator Sweet Pickled Radish Recipe

This Sweet Pickled Radish Recipe is a sweet and spicy refrigerator pickled radish recipe that is perfect served alongside many of your favorite dishes. Top a salad or sandwich with these pickles.

INGREDIENTS

Fresh Radishes Vinegar White Sugar Water  Salt For Pickling And Preserving Yellow Mustard Seeds Ground Black Pepper Bay Leaves Crushed Red Peppers

Wash jars and lids in hot, soapy water; set aside to dry. Rinse radishes thoroughly under cold water. Trim off roots and stems, then soak and agitate in fresh water until completely clean.

INSTRUCTIONS

Thinly slice radishes (⅛-inch) using a knife, mandolin, or food processor. Place slices in a large bowl, rinsing again if needed. Pack them tightly into three clean pint-sized jars, saving extras to top off later.

Boil vinegar, water, sugar, salt, and spices in a stainless saucepan. Transfer hot brine to a measuring cup. Pour over radishes, removing air bubbles with a chopstick. Add extra radishes and brine to fill jars. 

Wipe jar rims clean, then seal with lids and bands. Let jars cool for an hour, then refrigerate for at least 6 hours before eating. Store in the fridge for up to 3 months. Makes 3 pints.
