Wash jars and lids in hot, soapy water; set aside to dry. Rinse radishes thoroughly under cold water. Trim off roots and stems, then soak and agitate in fresh water until completely clean.
Thinly slice radishes (⅛-inch) using a knife, mandolin, or food processor. Place slices in a large bowl, rinsing again if needed. Pack them tightly into three clean pint-sized jars, saving extras to top off later.
Boil vinegar, water, sugar, salt, and spices in a stainless saucepan. Transfer hot brine to a measuring cup. Pour over radishes, removing air bubbles with a chopstick. Add extra radishes and brine to fill jars.
Wipe jar rims clean, then seal with lids and bands. Let jars cool for an hour, then refrigerate for at least 6 hours before eating. Store in the fridge for up to 3 months. Makes 3 pints.
