Sauteed Asparagus, Tomatos & Bacon

Fresh Asparagus and tomatoes are sautéed with bacon for this easy summer side dish recipe. A delicious way to prepare fresh asparagus when the garden or farmers market has plenty!

INGREDIENTS

Fresh Asparagus Grape or Cherry Tomatoes Bacon Onion Garlic Extra Virgin Olive Oil Salt & Pepper Fresh Parmesan Cheese

Dice bacon and cook in a skillet until crispy, then add onions and tomatoes, sautéing until onions become translucent.

DIRECTIONS

Add olive oil, trimmed asparagus, minced garlic, salt, and black pepper, tossing everything together evenly in the skillet.

Cover the skillet and sauté asparagus until tender-crisp, cooking slightly longer if using thick asparagus stalks for best texture.

Transfer asparagus and pan juices to a serving platter, then top generously with freshly grated Parmesan cheese immediately.
