Roasted Pepper and Chicken Fajita Recipe
Like most people I am always looking for easy chicken recipes to make for my family meals. Chicken is the name of the game in my home. I make more recipes and meals with chicken than any other meat. I also like to find products that make my life easier when it comes to dinner time ideas. As much as I love to cook there are some nights when I want a quick but delicious meal to throw together.
Tyson Grilled and Ready Chicken Strips are fully cooked, seasoned and found in the refrigerated section of your grocery store. I picked some up when I while I was shopping at Walmart the other day.
In minutes they are ready to serve.
They are packed full of flavor and work great in my Roasted Pepper and Chicken Fajita recipe.
They are also available in beef so if your family prefers steak fajitas you can make this recipe using the Tyson Grilled & Ready Seasoned Steak strips instead.
I headed over to the Tyson website to see what new recipes they might have. When I saw the Asian Chicken Kabobs with the bright red and yellow peppers it reminded me of my Roasted Pepper Fajitas recipe that I love. Roasting peppers are so easy to do at home in the oven. I make and use them in my cooking all the time. The Tyson Grilled & Ready Chicken Strips are seasoned and come in a number of flavors. For this recipe I am using the SouthWestern flavor but I have used the Fajita flavor for this recipe in the past. Either way the chicken fajitas taste great.
You will need to roast some peppers in advance for this recipe.
As you can see from my photo I decided to roast a combination of red, yellow, green and poblano peppers. I love poblanos for the sweet spicy flavor they add.
Roasting peppers are very easy and all you need to do is place the peppers on a roasting pan or cookie sheet and put them under the broiler .
The skin will get blackened and bubbly.
Once the skin is blackened on all sides of the peppers remove them from the oven, place them in a bowl and cover. You can also use a ziplock bag instead of the bowl.
Let the peppers steam in their own heat for about 15 minutes. The heat from the steam makes the skin slip from the peppers.
Peel the skin and slice the peppers or cut them in a large dice.
That’s pretty much all the prep you need to make my Roasted Pepper Chicken Fajita recipe. Now all you need to do is assemble your toppings and heat the Tyson Grilled & Ready Chicken srips in the microwave.
Once you have all your toppings ready and the chicken heated the fun begins. Everyone in the family can top their own fajitas with the toppings that they love. It makes for a great Mexican Night dinner.

- Flour Tortillas
- Tyson Grilled & Ready Chicken Strips
- Shredded Cheese of choice
- Spanish Rice
- Sour Cream
- Turn the oven on broil and put the peppers on a cookie sheet. Broil the pepper for ten minutes and flip them. Keep tunring th peppers until they are blacken on all sides.
- Remove from the oven and put all the peppers in a bowl and cover. A zip top bag works well also.
- Let the peppers steam in their own heat for about 15 minutes. After 15 minutes peel the skin and slice or chop.
- Layer the fajita with some Tyson chicken strips, roasted peppers, cheese, sour cream, salsa and and any other toppings you may like.
- Fold over the flour tortilla.
- Serve with spanish rice on the side.
