With back to school comes bake sales and fundraisers.  When my youngest was in elementary school I baked many cookies and brownies for her school bake sales or fundraisers. Now my daughter is in high school and they don’t do bake sales. But two of my three granddaughters are in school now so I will be back to baking to help the schools earn some money.

The challenge was to create a new brownie or cookie recipe inspired by one of the recipes featured on the McCormick website.  Once I saw how easy and delicious the Raspberry Brownies were to make I knew this was my inspirational recipe. Who doesn’t love a frosted brownie?

I decided to take this raspberry brownie to the next level and add a layer of raspberry flavored cheesecake to the center. {Scroll down to find the recipe.}

School Bake Sales & Fundraisers

 Brownies are bake sale bestsellers in my experience. I’ve learned a few things over the years and these tips will help make your bake sale a success.

Bake Sale Tips

  • Pre-package your bake sale items: Individually wrap your brownies or cookies in plastic wrap or a plastic bag. Avoid aluminum foil. It hides your baked goods.
  • Pricing: Add a sticker to each package with the price. I appreciate seeing the price without having to ask.
  • Price items at a dollar. Everyone usually has a dollar in their pocket. Four cookies for a dollar or a large brownie or two small brownies for a dollar is reasonably priced.
  • Make brownies. They always sell out. The richer and yummier looking the better.
  • Have a stack of napkins available.

Easy Raspberry Cheesecake Brownies

Recipe type: Dessert
Serves: 24
For the brownie layer
  • 1 package Family Size Brownie Mix
  • 4 teaspoons McCormick Raspberry Extract
For the cheesecake filling
  • 1 8 ounce package cream cheese, softened
  • 4 tablespoons butter, room temp
  • ½ powdered sugar
  • 3 tablespoons flour
  • 1 egg
  • ½ cup raspberry pie filling or seedless jam
For the topping
  • 1 tub chocolate frosting
For the brownie layer
  1. Follow the directions on the box of brownie mix and add the raspberry extract before mixing. Mix well.
  2. Pour into a greased 9x13 inch baking dish.
Prepare cheesecake filling by
  1. Beating cream cheese and butter until smooth.
  2. Add sugar, flour.and beat 1 minute.
  3. Add the egg and beat until completely mixed in.
  4. Add raspberry pie filling or seedless jam and beat on medium high 5 minutes until thick and fluffy.
  5. Drop heaping tablespoons of cheesecake filling evenly over the top of brownie batter 1 inch from the sides of the pan.
  6. Using the back of the tablespoon gently smooth cheesecake filling over the brownie batter keeping the filling 1 inch from the sides of the pan.
  7. Bake at 350 degrees for metal pan or glass at 325 for 40-45 minutes until center is set.
  8. Remove from oven and let cool completely.
  9. Once cooled mix 2 tablespoons of raspberry extract into the tub of frost. spread over brownie.
  10. Cut into squares and serve or package for bake sale.
