Place the first 4 ingredients into a crock pot slow cooker, cover and cook on high 4 hours or low 6-8 hours depending how large a head of cauliflower you are using. Cauliflower should be very fork tender.
When the cauliflower is done add the cream cheese, sharp white cheddar cheese and butter milk to the crock pot. Using a large spoon mix the ingredients together. The cauliflower should fall apart as you mix.
Recover and heat for 10 minutes on low until the cheeses have melted.
Using a hand mixer beat until creamy.
Salt and pepper to taste.
Makes 4 servings when using a small head of cauliflower.
